These little balls of goodness are power-packed and full of nutrients and antioxidants. They are not overly sweet but yet healthy, making them the perfect grab-and-go snack. You’ll love how the matcha combines with the pistachios and dates, keeping you well fuelled and providing a sustained release of energy throughout your day. A bonus is that these delicious energy balls are vegan, gluten-free, and very easy to make.
¾ cup (96.75g) raw cashews
¼ cup (30.75g) raw pistachios, shelled
12 Medjool dates, pitted
2 teaspoons Fubuki Culinary Organic Matcha
¼ cup (20g) shredded coconut, unsweetened
1 tablespoon coconut oil
¼ cup pistachios, chopped (for rolling)
- Place the ingredients (except chopped pistachios) into your food processor for one minute or until finely chopped and well combined, according to your preference.
- Using a cookie scoop, form balls out of the mixture and roll between your hands to create 12 evenly-sized balls.
- Roll the balls over the chopped pistachios, pressing the pistachios firmly into the snack balls.
- Place in the refrigerator or freezer for 10-15 minutes until firm. Enjoy!
Note: These snack balls can be kept in an airtight container in a cool part of your kitchen for up to 4 days.
